A thick fog shrouded the midnight.
Instead of staying in bed, Tan Kim Hock grabbed his gear before hopping on his bicycle and headed straight to the coconut plantation. He nimbly climbed up a coconut tree and collected the sap from a filled-up bamboo container near the top of the trunk. Then he carefully tapped the tree's flower bud stem by making a cut on the spadix before putting the container back.
Once done, he slowly moved on to another stem and repeated the same steps. Every midnight and evening was the golden harvest time, which he never failed to show up. At the end of each collection, he secured the bamboo containers firmly around his waist and carefully descended, as the tree swayed and its branches moved whenever the wind rose. What a thrilling and draining feat!
Then he filtered the sap before it was transferred to a large work to be boiled down and poured into bamboo moulds. The thickened sap was left to cool and solidify into cylinder shaped palm sugar. Made sincerely by Tan Kim Hock, all palm sugar blocks were of topmost quality and hence earned its famous name of Gula Melaka, recognisable even until today.
